Daging Ayam Maranggi Canape by Chef Susanto

Ingredients
Potato chips | 60 pcs |
Chicken | 400 gr |
Pineapple | 200 gr |
Shallot | 30 gr |
Garlic | 15 gr |
Galangal | 20 gr |
Tamarin | 10 gr |
Palm sugar | 40 gr |
Sweet soy sauce | 50 ml |
Coriander powder | 5 gr |
Fresh tomato | 250 gr |
Red chili | 30 gr |
Leeks | 50 gr |
Salt & pepper |
Direction
- Puree shallots, garlics, candlenut, coriander, and turmeric. Sautee them until the fragrant comes out.
- Slice chicken and marinate it with chopped shallots, minced garlic, chopped galangal, tamarin, palm sugar, sweet soy sauce, salt and pepper for at least 1 hour.
- Sauté the marinated chicken for 5 minutes or until soft.
- Put the tomato slices on top of the potato chips, and then place the chicken on top. Garnish with chili and leeks.
